My go to rub

Here are the ingredients for my "go to" rub. I use this in 90% of anything that needs a rub. I also let the rub melt into the meat for 24 hours before I smoke.

ALL PURPOSE BBQ RUB

2 tbsp kosher salt
2 tbsp granulated sugar
1 tbsp packed dark brown sugar
2 tsp chili power
2 tsp sweet Hungarian paprika
1 tsp cumin
½ tsp onion powder
½ tsp garlic power
½ tsp jalapeno flakes

Mix all ingredients and rub onto meat
Can be made in larger batches and stored in freezer

It looks good Lumpy, but honestly I don't like that much salt.

I made a rub for blackened fish tonight with mostly the same ingredients.  The primary differences were less salt, no chili powder, a combo of smoked and Spanish paprika and more Jal flakes.

My # 2 daughter got me a jar of the Jal flakes a month ago and I love 'em.  The heat is more subtle than crushed red pepper flakes and there's more pepper taste.

We have to keep tuning things up.  :D

Last batch I made, I stuck in the freezer for a few months. I did forget that I 4x the Jalepeno's for this batch.

Put the rub on 6 racks of ribs. They were good but very hot ;D

Where do you get the crushed Jals from? 

I did a tartar sauce for the fish tonight; crushed Jals, S&P, sweet relish, mayo, garlic, onion and a couple of other things.  It wasn't all that hot.  Maybe I need a new source for the crushed Jals.
