Hi,
Using my Bradley for the first time today. I am cold smoking salmon. Does it matter how much you put on each tray?

Welcome Annette.

FLB has you covered. The smoke and heat need to touch all of the meat.

Have fun!

Welcome annette b,

I've never done fish but similar what FLB said load the tray and give each piece room enough for the smoke pass by all the way around. Good luck!
