Briskit Mop

This great beefy mop can be used on any cut of beef, whether you are smoking or grilling, but it is especially good on brisket.

Ingredients:

2 cups beef stock
1 cup beer
2/3 cup Worcestershire sauce
1/3 cup vegetable oil
1 1/2 teaspoon salt
1 1/2 teaspoon paprika
1 1/2 teaspoon dry mustard
1 1/2 teaspoon black pepper
1 1/2 teaspoon cayenne
1 teaspoon Tabasco
1 teaspoon garlic powder

Preparation:
Combine all ingredients and mix well. Can be stored in an airtight container in the refrigerator for several weeks.




Bourbon Mop

This is a great sweet barbecue mop and works particularly well with beef. It's a perfect mop for smoked brisket.

Yield: Makes about 2 1/2 cups

Ingredients:

1 cup Kentucky bourbon
1/2 cup brown sugar
1/2 cup pureed sweet onion
1/4 cup dark corn syrup
1/4 cup ketchup
2 tablespoons Dijon mustard

Preparation:
Combine all ingredients and mix well. Store in the refrigerator.



This is a good, simple basting sauce or mop, for large cuts of meat. If you don't need this much, cut the recipe down by half.
Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes


Ingredients:

1 gallon apple cider vinegar
1 quart Worcestershire sauce
10 ounces lemon juice
3 tablespoons black pepper

Preparation:
Mix all ingredients in a large pot and bring to a hard boil for ten minutes. This is an old fashioned, true Southern Style basting sauce, excellent on chicken and large cuts of pork (Boston butt, shoulders, hams, whole hog, pork roasts, etc.) The meat should be cooked over a slow fire (215-225 degrees F) and basted every 20-30 minutes (not during last hour for large pieces of meat).
