bradley dried tomatoes

hope this is in the proper section! ive been searching for a how too for drying tomatoes with no luck! any help will be appreciated! thanks in advance.

Hi Fryfour;
Welcome to the forum.

I've dried some a couple of times in the OBS. It was successful but a lot of monitoring. I like to use plum tomatoes, and cut them in half. You need to rotate the racks top to bottom, and front to back often. The pieces don't dry at the same pace, so you also have to keep an eye on which ones have finished drying and remove them from the racks. I try to keep the cabinet around 140°F - 150°F. If it is not a sweet fruit, I use pecan for the smoke flavor; applying 40 - 60 minutes. For sweet fruits I will use apple or maple.

We're swimming in tomatoes here at the office.

I don't eat tomatoes by themselves but there is an abundance of them around right now and that link might be something to try? Thanks!
