Did the 3 spams today. Looks good, let em rest then a taste test.


The turkey i rubbed with this i got from the base.


One bacon spam got spicy mustard and one CYM and homemade rub.



190* with apple.

Funny I looked in the pantry this morning and saw a can of Spam and thought "smoked Spam"!

I wanted to eat some but not hungry. With this gastric surgery your head says eat but your stomach says no, which is a good thing at times  ;D
So vac bagged and into the freezer.

I think i had an out of head i mean stomach ummm body experience today  :D

I like smoked spam.  Haven't smoked the new Bacon Spam yet - probably next week during my batchelor weekend.  It's funny, for the last 4 years, I've smoked a couple of spams for the barbecue I do for my flyfishing buddies.   They almost always go home whole.  Nobody wants to touch it, they cringe when I tell them what it is.  Next year, I'm gonna do some sort of pineapple/spam smoke.  You know - get the Ka Huna into us island-deprived deadbeats in Middle TN.   ;D

Spam is a word that used to be unspoken in our house, as my Father was on a Destroyer Escort in WW2 that ran out of any fresh meat after 3 months at sea and the following 4 months were SPAM! I do keep some smoked Spam in the fridge for those times I have nothing to put in my eggs. I use my cheapo Rival slicer to cut razor thin slices when partially frozen, brown with some evo and garlic, good to go. Done with Head Country or CT, both good. With CT, slice 3/4 and soak a couple of days.
