Hi Members,
Just a few words to introduce myself. My name is Jan and I live in Queensland. Australia. Since retirement
I have now all the time to try to indulge in smoking meat and fish, sausage making and curing meat, hunting and fishing
For many years I have smoked fish but could never repeat the same finished product due to not enough time, knowledge or
people like you, I could ask, with all the experience.
I am also a member of another similar group and between you guys the knowledge is amazing.
I am also into old fashioned hand me down recipes for baking bread, cooking etc

Welcome Jan,
Nice to see someone from Australia here.
Brings back memories of the 7 days I spent in Newcastle back in 79.  We were suppose to go to Cairns but ended up Newcastle instead.  I was looking forward to diving the reef.  Oh well, got to see Cheap Trick and Mi Sex in concert with 3rd row seating right in front of Rick Nielson (lead guitar for Cheap Trick).
I'll have to remember that the hamburgers aren't made the same way there in Australia.   ;D
I am still impressed with how friendly the folks were in Newcastle.  Hope you come back often and share some of your smoking exploits.
