How to order pork bellies

The times I have made bacon I bought pork bellies at a local market. It was very good, but the cut of meat was a large percentage of fat. I see other posts that have made it from bellies and their meat has much less fat. I have the potential to order direct from a hog farm. Is there a special cut I should ask for? Is there such thing as a bacon pork belly or bacon back, or whatever I should ask for to get a good cut. This place is a pre-order shop so there is not much opportunity to "window shop" before I buy.

Fresh side pork or Bacon bellies is all I ever ask for. Except for when I go to the Edgewood Locker. I ask them for their bacon bellies (Locker Bellies). The amount of meat to fat is dependent on the pig itself and the breed. I'm not sure what the cost would be but I can get you the information to the Edgewood Locker and you can see if they will send you some fresh bellies from their hogs. They raise them just for the locker plant.

I have a slaughter house near by, and they will only sell the whole slab. If he is willing to divide the bacon then ask for the rib end (the section that was attached to the ribs), or center cut bacon also has more meat then the end section; but expect to pay a higher price

When I'm making bacon I just tell the butcher that I'm making bacon.   He'll show a couple of bellies or he'll ask how lean I want.   Usually get exactly what I want.
