Temp for jerky

O Okay I am sure there is something on temperatures somewhere on this forum but cant find it.  So what temperature does everbody use for Jerky,  I am doing ground meat I have Deer and stinky old Antelope (hope the antelope doesn't ruin my smoker)  I usually dry it at 200 should I go lower or is this about right?

I am thinking at 200 you are cooking the meat.  I would think that you would not want to go over 140 to dry it but I have never made jerky in the Bradley.  One of the jerky experts will be along shortly to give you some advise.


Enough ain't enough and too much is just about right.

I usually do mine at 160 with the vent wide open.    Watch it like a hawk after a few hours.   You want it to bend not break.   I've also done jerky from ground meat and I do that in a dehydrator.   The highest setting on it is 145 and it takes about 4 hrs.    I think the fan has a lot to do with the quicker times in the dehydrator.

When I smoke mine, I use 160F for about an hour, then into the dehydrator @145F
