I am going to smoke some ghouda, pepper jack, colby jack, cheddar and string cheese and was wondering if anyone has ever used cherry wood for the smoke and how did it come out? I usually use apple and it comes out good but just thought about changing up. Hopefully going to do it tonight if I get enough time so any answers would be welcome.

WD56,
Haven't used cherry but I did use maple which I would sorta equate to cherry, mild mellow smoke and it turned out real well.  Don't think you'll go wrong.

I have never used cherry on cheese but think it would be fine. I have used apple, oak, maple and hickory on cheese. I mainly use apple.

Cherry would be fine if you are looking for a mild smoke. Used alone it is very similar to Pecan or Maple. I alternate 2 sweet woods to 1 hickory for balance of smoke that I prefer.
