Running the OBS @ 280*+

I am going to smoke my turkey tomorrow in my OBS.  Has anyone run theirs at 280* or higher with any issues?  I have the dual element so I should be able to get to 280* no problem.  Poultry doesn't really benefit from the low temp so I figured I could get some crispier skin this way...

I also have dual elements and have had no issues with that temp.

You just wantta have your temp up there for bout an hr before you put your bird so all the stuff round the back and the V tray can be burnt off.

I can't get 280 out of mine I don't think. So I will be smoking and then moving to oven afterwards.

I preheat mine at 300, dual elements.

have ran my up to 350 with a 15 lb load  with a 900 watt element with no problems

Just don't go too high. The OBS has a high temperature sensor that will trip at 320°F, and sometimes they trip at a lower temperature. They are made to reset after the cabinet cools, but sometimes they trip permanently and have to be replaced. Also there is an in-line fuse could blow.
