Stick burner wants to cold smoke.

Hi guys.
I've been working on my barbecue for the past several months. I use a decent quality, "homeowner" type offset firebox pit for my PP, ribs, brisket etc. and have been getting pretty good results. My wife gave me a copy of Charcuterie because she noticed my enjoyment of BBQ. Well... as usual, her encouragement turns my simple interest into an all consuming passion and now all I do is think about wood smoke if I'm not actually cooking (I heat with a wood stove also  ::))
I plan on continuing with my stick burner for BBQ but I want to learn the art of charcuterie so, I looked for a forum to do my research and here I am.
My first decision will be the equipment I use. I'll be looking for suggestions on using an "outta the box" smoker or a build your own model. I'm currently leaning toward a DIY, either built out of a fridge/freezer or some other type of cabinet because I feel an outta the box one will limit my production goals too much. I'm even toying with the idea of building a traditional wood "smokehouse" but I have no idea on whether that's even practical. My electronics skills are extremely limited so that will limit my DIY adventures.

here is another option for a cold smoke.
Nepas has one of these units, he is the one that turned me on to this rig.
it works really well and adds minimal heat to the cook chamber. i would recommend this
unit to anyone interested in cold smoking.

Thanks guys for the input.
ron... that's the concept I expected.
Up In Smoke... I have one of these on order. I'll use it in my kettle 'till I get my basics down but I doubt something like this would generate enough smoke for an actual smoke house.
