Smokin' cheese!

Sounds like a good way to kill a cold day.

Yet today another round of cheese. And some cream cheese. The cheese got 3 hours of appl and the cream cheese got 1 hour.

Turned out good. Took smoke fast so its going to get smooshed into a dip this week sometime  ;D

Will the cream cheese not require a month to age?  10.5 said cheese needs time to set or it taste like an ashtray.  Just asking
