I'm a new digital smoker owner

I've been smoking food on and off for about 30 years.  I started way back when with a Little Chief smoker.  I upgraded to a Big Chief for a number of years before buying a Bradley 3 years ago.  That was the manual 4-rack electric.  It did a good job for me but it was just too labor intensive to suit my tastes.  I had to stick around and baby sit the temp control.  So I sold it last month and bought the 4-rack digital SS model.  So far I've smoked kokanee fillets, a boneless pork roast, and made some duck and white tail deer jerky in the new one.  I can't say enough good things about this new machine.

I've got some more kokanee fillets thawing out in the fridge right now and will be smoking them this weekend.  I also bought a couple of Butterball boneless turkey roasts yesterday that I'll be smoking over the holidays.

I've developed a fairly decent brine recipe over the years that leans more to the sweet side as opposed to the salty side of taste.  I'll post that up as soon as I have a chance to figure out the best place to put it on these forums.

I'm really looking for some time and temp suggestions for doing whole trout as ice fishing is almost upon us here in Utah and I'm looking forward to a bountiful season.  I'm thinking our tiger trout (brown trout/brook trout cross) will be outstanding when smoked.

A bit further down on this forum is a whole secton devoted to smoking fish.  I'll bet you can get some good ideas there.
