A new rub from an old time smoker

This rub was created by a gent whom I was never fortunate enough to know.  From what I have heard he was a fine fellow with a passion for good QUE.  His rub(Elder Ward is his name) follows and I will post a link to the entire article he personally wrote about pulled pork.  It is a short read but worth reading for sure.  I will be trying this rub for the first time this weekend and I will let you know what I think of the results.  Enjoy and happy Smokin'[;)].

Rub
· 2 Tbs. kosher salt (NEVER use iodized salt, it ruins stuff)
· 2 Tbs. sugar (I prefer Hawaii raw when I can get it.)
· 2 Tbs. brown sugar
· 2 Tbs. ground cumin seed
· 2 Tbs. chili powder (pure not with garlic etc. added)
· 2 Tbs. cracked black pepper
· 1 Tbs. cayenne pepper (there is no substitute)
· 4 Tbs. Hungarian paprika
· 2 Tbs. ground sage (my secret ingredient)
Makes 1 cup

Well the Butt is resting in the fridge awaiting the Bradley.  I will crank up the Bradley about 10:30 pm(butt out at 9:30) and in with the butt an hour later.  Watch for a hour then beddiebye until tomorrow probably around 3-5 pm.   Gonna use 4 hours of hickory around 225f, and no I'm not getting up to change the water.  Never do on the overnight cooks[:D].  Then FTC until time to eat.  I injected this guy with some Dales's type sauce and apple juice to boot so the cook might be done by 1 pm.  Report to follow tomorrow night[:D].

I find this to be my tastes as well.

Thanks for the post. I find the "red" sauce recipe even more interesting. I prefer to put my rub on the night before. Just one less thing to worry about on the day of smoking.

Well didn't get the BB on until about 1230 am[:(].  Sometimes my online games last longer than you think[;)].  After finding my thermo in the door was off I decided to use the Oldman method and let my extra digital thermo just hang in the cabinet.  So Olds thanks for another great idea[:D].  Temp nice a stable just after 1 am so hit the bed and back up at 8am filled the water bowl and BB is sitting at a nice 164f.  Digitial thermo still reading 225f.  Lost 25 f when I changed the water bowl but back to temp in about 45 minutes.  I'm in no hurry[:D].  Got to admit the smell coming out of the Bradley is heavenly.  If this butt tastes as good as it smells I have found a great new addition to my rub collection[:D][8D].  More details later.

In keeping with the true tradition of all game makers BF2 when release was a non-restricted Demo/ Beta download--all for just 50 bucks! [xx(] The first patch was out about 10 days after the release--not an overly large patch just 13 plus megs. [;)] Since then they have announced another patch.... what all of this within the past 60 days!

Kind of reminds me of Ghost Recon and its addons Desert Siege, and Island Thunder. If memory serves me correctly GR had 3 major patches that had to be installed in order. (The single patch did not come out until the game went gold.) What this means is they were not accumulative either. So if a person just purchased the game and download the lastest patch nothing worked. They had to uninstall the game, go find the first two patches, reinstall the game, then patch 1-2-3. I think DS had 2 patches and IT had one. (That is a total of 8 patches.) And the good Lord help you if you installed IT before DS and its patches. If you did you got to install it all over again.

You got to admit the gaming industry knows what it is doing. Let see... GR $50.00, DS $30.00 IT $30.00. <b>Total $110.00 for a Beta level game where the bugs are found out by the gamers while all along the industry does not have to pay for that research.</b>

Well the BB was finished about 530pm.  Pulled her off and wrapped in HD foil and then a towel into the cold oven(I left my cooler at my mom and dad's[:(]).  Finished kegging up a batch of homebrew and took the BB out at about 8pm.  Man tender is not the word for this one.  Pulled the bone out with 2 fingers and put it in a bag for the dog(raining right now).  Pulled the meat with my hands and sammiches to follow shortly[:p][:p].  The rub makes an excellant bark and is a touch on the warm side but not to spicy(for me anyway).  taste tests give this rub a thumbs up and will do again.


Ahhh gaming.  My only game I play on-line is CC2.  Close Combat:  A Bridge To Far.  A WW2(market garden operation for the ww2 buffs) simulation that is quite fun.  A one on one game that can leave you with a true "rush".  Now didn't I see a new ghost recon for xbox 360?  looks unreal(more like it looks like it is real).

Only to later cancel it... saying they were to close to releasing GR3. Of course all of this for the box only... [xx(]

Of course I understand as to why. If it is only for a consol unit then no one can make Mods for it. Thus it has a much shorter life-span and they get to sell you another $50.00 game much sooner. I have over 1.5 gigs in Mods for GR1. If it was not for the cracks in the coding that game would still be going strong.... just too many hacks now to deal with.

No matter how good the game is there is no way a box can compete with the visual of a good V-card and 1st class monitor.

Is CC2 solo only and limited to just one on one or is that just the type of game you like the best? I always like pistols only where it is a field of solo gamers and the person who stayed in the "smoke" the longest was the winner.

However, without a doubt Siege with no respawn, enemy ID off, on a 5-10 minute time limit is pure gut rushing. The defenders always start one man down.

There was on Mod where the weapon were... now get this, chickens, rocks, knives, and baseball bats. If you got hit directly with a chicken it stayed on your monitor and you could not see, while the guy would then slowly cut you up into pieces... I don't think I ever laughed so hard in all of me life.

I believe somewhere I read where Battlefield 2 included VoIP. That sure going to put a hurt on the paid voice servers.

WOW 64 gamers... you better have a smokin' pipe or it will be lag city for sure. I don't see how an entry level DSL could even begin to keep up. When I was hosting GR with 34 gamers my up many times exceeded 400KB per second when running HX5 Massive mode with 200 bots. Then another 100KB for the VoIP I ran in the backgound.

The article in the link is actually pulled off the BGE site.  I read it last year and was laughing out loud at certain parts.  That guy sounds like a hoot and would have been fun to know.

As for the rub, I haven't tried it yet, but will on the next butt.  Thanks for the reminder. [8D]
