If I soaked my casings I use for beef sticks in 1 cup of water and 1Tbsp of vinegar and then find out I did not need all of the casings, can I use them? Do I need to dry them then put in ziploc(if so I will probably throw away because I think it would be a long time to dry) or can I put them wet in ziploc and into frig, freezer or just in cupboard? I have about 3 lbs worth of casings.

When I have left over casings I just run them through my fingers to get the majority of the water out then pack them in salt again in a zip lock bag. I don't know about the effect of the vinegar though.

they are not the hog casings, they are those brown that is used for beef sticks.

You talking about Summer Sausage casings then or snack sticks? If snack sticks you shouldn't need to soak collagen casing at all.
