It's cold so might as well cold smoke

Iced in another day so what better way to spend it then doing some cold smoking.


Two cheddar and a swiss on the left.  Two pepper jack and Monterrey on right.  Middle?  Some cranberry white cheddar that showed up in a gift basket.


Pistachios in Rodak's Tonsil Tickler.  One batch of chex mix with Tabasco as the kicker and one batch with Alabama Wild Fire as the kicker.

Oh but I am working.  Got my lap top set up at the table overlooking the OBS to make sure all goes well

With this cold weather were havin I need to smoke some cheese too.

Been waitin for it to go on sale.  ::)

Well they just canceled school for Thursday.  Third day in a row.  I am going to the office no matter what.  Locked up wife and kids is getting crazy

Smoked the cheese, house full and can't go no where and stir crazy! Heck that would even make me want to go to work! Maybe?  ;)

Or at least say I am going to work and go hand outand the indoor driving range or something.  Worked out at the gym down the road for 2 hours tonight to get away.

Here is the cheese all vac sealed.  I know about letting sit for several weeks.  Can you put it in the freezer right away or should you wait the 4 to 6 week resting period then freeze?

I wouldnt freeze it.

It gets all crumbly and kinda dry.

I've it last over an year vac sealed in the fridge.

I sprinkled some Northwoods Fire on that one cheddar after I posted the original pick before the smoke.  Thanks for the advice Curt, I will not freeze.

Now thats something I'm gonna do, put some seasoning on the cheese before the smoke it.

Never thought of that.
