UK 1st time Smoker needs help

Hi guys, I have just receieved the bradleys 4 rack digital smoker for christmas, i have a few ideas what i can smoke but would like some advise on the best way to start out.

Also if there are any pit falls that i can avoid, i have just got 2 packs of the multipack so i can expirement and a digital thermometor as well as a cover.

any advice given would be great, eg meat to use, cooking times, smoke pucks to use and so on

Pitfalls? not a lot of big ones, but there are a few...

Keep the top vent at least 1/4 open.

You are cooking by (in most cases) meat internal temperature and not time.

I always keep my vent full open. You need to get the moisture out or it will keep smoker moist and cooler temps. Ribs using the 10.5 recipe is always a good one to start with.

Chicken is a good way to start. You can you legs, drumsticks, wings...

Apply a little olive oil & your favorite rub. Fully open the vent & smoke with apple, cherry or whatever you like for 2 hours max. Set the smoker at the higher temp.

Welcome to the forum Frank.  I started out making jerky.  It is a fairly simple process, it is done in a relatively short time and you get good results. I found it a useful excercise to help judge how the smoker performs; how quickly it heats up and cools down, how much you have to keep an eye on it - or not and how to judge when your stuff is done. Yea, chicken is a good one to start with and keep that vent wide open.
