Lebanon Bologna

Hi-Mountain sells a nice bologna kit.  It is a little time consuming but well worth it.  I use sirloin for the beef.  Tried chuck before but didn't seem to have as good a flavor.


P.S. What is fermento?

i will have to do some research on it i have no idea. this bolgna they make has a lot of smoke flavor

A fermentation/curing aid used in sausage making. Is supposed to accelerate the curing process and delivers a more consistent product.

Anyone using starter culture should be aware of a couple of things. One is that there are different types that have to be handled differently and the other is the main concern that if you use to much your product will taste like $#{!. It will taste spoiled to the max!
If anyone is really interested (or bored), do a search on starter cultures.
IMO don't use this stuff unless you are sure you want a tang!!!

LOL, I can actually see someone stuffing a fruit cake into a casing.  If they did then that stuff would really last forever[:D].
