Smoking Newguy!

Hey everyone! I'm Shep.  I bought a bradley 6 rack digital smoker in the beginning of the 2010-11 deer season with plans to make sausage and jerky! I kept it a my friends office since we do most of our hunting together.  Unfortunately, my friend smoked one load of sausage for me and almost the rest of the meat for the year was turned into jerky using a dehydrator. 
Now I have brought this fine peice of equipment home with me!  I own a bar and grill and invited my chef over to try this thing out.  We have loaded it up with some fine meats from ribs to sausage to chicken.  Plans for turkey in the next day or so.  I'm really pumped on the smoker and hope that I can gets tons of advice here.
I have absolutly ZERO experience smoking anything.  So I will be asking plenty of questions.

Welcome Shep!!! You own a bar and grill...oh boy...a man after my own heart...my hubby and I have been mulling over a pub for the last 3 years...may ask you some questions about that!!!

Welcome Shep!  The best thing about the Bradley is it is so simple to use.  You will have a small learning curve but that's why we are all here.  Don't hesitate to ask the simplest of questions, for you see, we have already asked them too.

Hi again! Thanks for all the warm welcomes.
I do own a bar in Ocean Springs Mississippi.  Its a 24/7 bar and grill. Its called Sheps Fort Bayou Bar and Grill. You can find it on facebook and our website.  If anyone has questions on that feel free to ask.  But I'm really here for the smoking help!  I'll take plenty of pics and upload all the recipes I can.
I think I'm going to do a Deer tenderloin tomorrow with either a apple glaze or cranberry glaze.
