Two Little Fatties for supper

Started off with store bought mild itallian saugsage


Then I took my trusty filet knife out and took the casings off


Flatened it out


Spread some Philadelphia Hearb & Garlic cheese on it


Sprinkled some Montreal Steak Spice on it


Added some colour with bell peppers


Rolled it up and split in half


wrapped in your basic bacon weave


All wrapped up for two hours of smoke. Used crown royal for this one


And after 4 hours its all done


Now dont that look good???

The cream cheese gives it a very rich flaver. One i'm used to as I use this in a walleye recipe I have. Not sure what gave it some heat as the saugage meat was mild but hey its got some kick to it. Very nice indead and i will be making this again.
