Some Cold Cheese That should not be cold when I eat it

Dicided to do some Jalapeno cheese this afternoon. Smoked with apple for 1 hour and 40 minutes. Why apple, I said why not.

The big wholesale store in town always had big blocks of that stuff but when I was there this morning they where all out so I ended up getting two cylinders of it instead.

mine had an off flavor ,used hicory ,might try apple or cherry next.or maple ....hmmm.it also could have been the cheese itself.i found a piece that had no smoke and it tasted funny anyway.oh well today is swiss cheese day,mabye ill try some apple on it this time.
