Hey everyone, I got a 5 lb butt thats gonna be pulled pork for dinner tomorrow, I've been able to find the cooking temps, smoke times and desired IT but I'm just wondering if anyone can tell me a general rule of thumb for cooking time per pound of meat.  I will be doing to FTC method but trying to decide when i should start smoking.

Cheers!

1.5 hrs/lb is the general rule but each butt has a mind of it's own and will cook on it's own schedule.  I make sure I leave a bunch of time after my "expected" cook time for FTC.  I've had one in FTC for 9 hours before and it still came out piping hot.  Good luck!

I have done 8 lbs that have taken 16-22 hours at 225*. As said it depends on the butt.
