Smoked Salmon Spread

Making good use of your smoked salmon

tub (12 ounces) light cream cheese
      1/2 cup sour cream
      1 tablespoon lemon juice
      1/2 tablespoon Worcestershire sauce
      1/8 teaspoon salt
      1/8 teaspoon black pepper
      2 cups of flaked boneless smoked salmon
      2 tablespoons finely chopped celery
      2 tablespoons finely chopped green onion
     
      Take cream cheese out of refrigerator and let sit on counter for 15-30 minutes to soften.
      In food processor bowl, place cream cheese, sour cream, lemon juice, Worcestershire, salt and pepper. Blend until creamy.
      Remove skin from salmon. Place salmon in bowl and mash with fork.
      Add celery and green onion.
      Pour in cream cheese mixture and stir until well mixed.
      Serve with cucumber and carrot slices or whole grain crackers.
      Makes 12 servings (1/4 cup each).

Devo...I make this spread all the time...now..after the SoCal Smokeout...I put the skin on the gas grill...dang skin chips are crazy good...I mean...CRAZY GOOD... ;D

What La Quinta said, do not throw the skin away, at the SoCal smoke out we put the skin from my Lox on the grill and man I have been kicking myself since for throwing it away for so many years, never again.
