It was real nice today so we went to Sam's and then we smoked the cheese..and now we wait, the last batch we tryed some at two weeks but we left the rest for a month, and that was really good...so this will sit for a month..
Today we did pepper jack, cooper sharp and sharp cheddar...Really like the cooper sharp..

Cooper Sharp is made in New York and is a very good extra sharp cheese, I think it is a north eastern product only, but I think if you google it you may find a place that will ship it..
