Cornbeef

I thought a read a thread about cornbeef. I can't seem to find it~~~in search the key words: cornbeef, corn beef come up empty (?)

Any suggestion on smok'en a cornbeef and a nice mustard cure/sauce?

I've done corned beef in the past & plan an doing some for Indy this year. It's a little different than regular brisket because, unless you've corned it yourself, the fat cap is gone so it's important to keep it moist.

The smoke & corned flavors mix very well IMO. Not having tried it, I would be inclined to go with a stone ground mustard, adding some ground toasted coriander & mustard seeds. Just remember, that's why the wife is the lab rat before I serve anything to company![:D]

Well I must be lucky as we have a place that sell Corned Beef with a good 1 inch of fat on top of it!

EDIT If you have a reciepe for CB please post how you corn it....thanks!

kirk,try it on  the grill.I believe thre is a recipe in Smoke & Spice.
