So I went to my local farm connection and picked up some spare ribs. Since I was delayed picking it up, they cryovac'd it and froze it. The pak has 7lbs ( 2 large racks). Since there is only the wife and I, I only want to cook one. Would it be safe to defrost in the fridge to the point where I can separate them and then re-freeze the second rack? I am assuming that it would never go below 40* when defrosting so should it be ok to re-freeze?

To be safe Gus you should cook both racks and I'll take the second one off your hands for you!  ;)

But to answer your question I think you will be ok. I have had to do that before and I only let the meat thaw out enough to get them apart!

Yep!   Pry them apart (might have to run some cold water between them) and vacseal/freeze the other one.

Everything I read, says you can as long as it not thawed to room temps...if thawed in the refridgerator it's ok to refreeze...
