Dizzy Dust Hickory Baby Back Ribs

Got some Baby Back Ribs from Costco, so I seasoned one rack with Dizzy Dust

and vacuum packed the other two and put in the freezer.  I put the rack of ribs in the refrigerator to marinade over night.  The next day I took the ribs out to let them warm up to room temperature and preheated the smoker for 220.

Thought that I might as well apply some Hickory to some salt while I was doing the ribs, so I put some kosher salt on one tray and sea salt on the other.


I applied 3 hours of hickory to the robs and salt, then took out the ribs and wrapped with foil and apple juice. Then back in smoker for 1 hour.  Then took the ribs out of foil and applied Sweet Baby Rays BBQ Sauce.  Then back in the smoker for 1 hour.

Her are the Ribs out of the Smoker and ready to eat.

and the plate of ribs, corn on the cob, and mashed potatoes.

All together I think it was a successful try at ribs for the first time. They were very good and moist.

Ribs look great! Give that salt some time to rest before using. It will start taking on a darker color after a few weeks and get's better with age ;)

So is that Dizzy Dust spicy or a little sweet? And where did you buy it?

zueth...ribs look killer, we like sweet baby rays too...I think we have ribs on the menu for thursday or friday...

It is a little bit sweet, I like it.  Got it at yard and pool.

Dizzy Dust rocks... used to get it here locally, but the deli had a falling out with the supplier. It's a good balance of sweet, and salty, it may have a bit of maple in there, if I remember correctly. Sure smells good cookin'!
Chew carefully and don't let your meat loaf.

Nice ribs!  Dizzy Pig Ragin River is great on pork as well.
