Hello from Minneapolis.  Last week I received my Bradley digital 4 rack smoker.  Now I am looking for ideas on what to smoke ;D

ribs or chicken are good starters to get a feel of the unit. Butts are forgiving but usually take overnight.

I am new at using a smoker also.  I smoked some chicken thigh's the other day and they turned out great.  I have also tried brisket but I think my temp if off on my smoker.  Set it at 220 and it must have been cooking at about 190 because it took 12 hr.s to smoke a 3 lb. brisket.  It should have took about 6 hr.s.  So I ordered a pid today, hope this solves my problem.

Thank you for the info sites, they were very helpful.  I really like the one on the application of the vent.
