First ribs

Let me start of by saying thanks for all of your guys tips and trick you gave in my posts and that you've posted in others, I did my first brisket last weekend myself and everyone that partook thought it was the best brisket they ever had, and I owe it to you guys!! 

So by popular demand I'm doing another brisket this weekend and I think I'm going to do some ribs either at the same time, possibly do the brisket the night before and refrigerate it and reheat it in a roasting pan with beef broth did this and I thought it tasted better then the day it was cooked, anyway so I got some baby backs on sale a couple days ago and going to try and get some spare ribs to do as weep, so my question is were would I place the Auber meat probe on baby backs to get the best reading? It seems to close to the bone would give a false reading, but maybe I'm wrong? And if I do spare and baby backs at the same time what one should I put the probe in and if I do 3 shelves in my smoker Which shelf should I hang the box temp probe and which one should I put the meat probe in? And how often should I rotate shelves? And last off all what is the 3-2-1 method?

Sorry I know that's a lot of questions, but I appreciate the help!

Don't use meat probe on ribs. They let you know when they are done when the meat crawls up the end of the bones. The 3-2-1 method is 3 hours smoke, 2 hours in foil with splash of juice, 1 hour naked to firm up. This can vary depending on the ribs. There is a link which I'm sure someone will post along with more info. I am on my phone so it's kinda difficult to cut and paste between pages.

Cool thanks! think I'm going to fill up 3 racks were do I need to put the cabinet temp probe? And do I Need to rotate shelves or would just rotating them between each step of the 3-2-1 be good?

Put the probe just below the lowest rack with meat on it. You can rotate hourly or as you 3-2-1 but make sure you not only rotate up and down but back to front. On the other hand there are times that I never rotated and all came out well. Even if you rotate, there is no guarantee that they will all be done at the same time. So determine individually whether or not they are done. Can be by the pull back from the bone or test the tenderness with a toothpick.
