This is a small 3 lb batch.

Lean GB


Mix



Juniper berries ready to smush.



Sugar



Adding garlic, pepper, juniper berries and some water to the GB.



Mix in good by hand



Next add the poke, cure, salt & sugar to the mix and again mix by hand.





Now bag this overnight. You will need natural casings.

Now dry em for a spell.

2 hour cool time then into fridge.

You need to let us know about the taste of the juniper berries. I had a old sausage maker years ago tell me that juniper berries was the secret in their sausage. I always thought that they smelled rather strong and have never used them.

I've never used juniper berries in sausage, but have in beef dishes (roasts, gravies & the like).
They can be overpowering in a dish (like SAGE), so one needs to not be heavy-handed.
They can add a 'piney' or 'herbal' savory note to foods.

I love 'em in gin, too.  ;)

These turned out really good. The 1/2 tsp juniper berries have a very mild taste.










Y'all stay tuned cuz i will be making these again but in a larger batch  ;D

How would you describe the taste of this batch (i.e.similar to? tastes like chicken? porky? etc)......besides "good!"?  :)
