Egg Plant...

My wife and I put egg plant in the freezer every year, and this is how we do it...
Peel the egg plant and cut into strips that look large french fries...
Mix 2 eggs and 1 1/2 cup of milk...
1 box of  bread crumbs..(you can mix some crackers crumbs with the bread crumbs if you want)
Put the pieces of egg plant into the egg milk wash and then into the bread  crumbs...
After you have them done, repeat the process, egg wash, bread crumbs...
Place on a sheet pan, cookie sheet..
Place in the refridgerator for 1 1/2 hours
Now we use cast iron frying pans, but any frying pan will work...
We use canola oil...frying the egg plant to a nice golden brown..
Allow them to cool...which is what the picture is showing...
Once they are cool,place in the freezer while on the sheet pans allow to freeze,
Then you decide how big of a serving you want,
and place in zip lock bags and place back in the freezer...
To serve...place them on a sheet pan and heat to about 400 degrees for about 20 minutes...
We don't recommend using a microwave, they tends to dry out the egg plant...Enjoy.
