Got some Elk from a good friend. Was going to go with sticks but decided on jerky.

Cutting tomorrow.

I'm waiting to see how it comes out, too.  What "flavor" are you going to make?  I may get some of Tim's marinade that he used at the Fall Gathering.  I will be making some elk jerky to take on my elk hunting trip in early December.  Time to restock the freezer.

Rick,
I received my Marinade machine from Todd today.  I'll be using it when I start to get my elk jerky together.  Used it on a flat iron steak with some of Tim's M3 rub.  Good stuff, all the way around.

WHAT, you made whole muscle jerky and did not use the fancy slicer attachment? It does look good.  :)

All done and ready for the brown bag. Shrinkage is about 40%
