I was out of town Thursday and Friday on a business trip.  My wife calls me this morning and says "My brother is driving down to Amy's today and I am going up to see him for the weekend.  (Amy is our daughter)  She says "you know the Kielbasa that you made up last week"?  Yep, says I.  She says "do you mind if I take him SOME" as he loves basa.  I reply back and say "sure, not a problem at all".  Then she says, "would it be OK if I take him SOME of the snack sticks that you made last weekend"?  "Not a problem, I think he will like them" says I.

I get home around 2 this afternoon and I had not had lunch so I am thinking I will grill up some of them basa.  I opens the freezer and I can't find them.  I made 10 pounds and we only ate 2 of the 1/2 rounds.  I calls the wife and asks her where she put the rest of the basa.  Calmly she replies, "You said I could take Bill some".  Thud.  Your took ALL of the packs?  Yes! She replies.  She says, "I figured that you could just make more and Bill loves Kielbasa".  "OK, and how many of the snack sticks did you load up" I reply. "Oh, I took all of them" she sweetly replies.

Just a FWI.  I think SOME means ALL, so I think we need to clarify and confirm before we agree to something.  ;D

So off to Costco I go to get 15 pounds of butt and 10 pounds of ground beef.  Going to make 10 pounds of Kielbasa and 10 pounds of Jalapeno & Cheddar sausage this weekend and a 5 pound batch of snack stixs.

15 pounds of Butt

Cut up in strips for grinding.

Grinder all set up

All ground up

5 pounds Butt and 5 Pound beef for the Kielbasa

All mixed up and ready to stuff

Just loaded the 10 pounds into the Bradley.  Most are cellulose casings with a few collagen casings.

Will roll smoke in about 1 hr as they are in the drying cycle now.  Will give them a hot bath after the smoke and let rest in the fridge overnight.

Will post more pics of the smoke later.

Enough ain't enough and too much is just about right.

I think you should take an equal part of her cloths closet to Good Will. I have had the same experience at my home. My wife sees my stuff as hers to give away. I am supprised that you are doing such a small batch. I would have knocked out a 30# batch at least.

The ground beef was already ground and that is only 10 lbs of his projected load.

The pack had 2 boneless Butts and I had them cut up in about 15 minutes.  Going to get a fresh beer ate into the work time  ;D.  Hand mixing took about 5 mins and stuffing took around 20 minutes.  Had to take a beer break.  I had the pork all cut up mixed and stuffed and in the Bradley in under 1 hr.

Kirby, I would love to have a bigger smoker to do 30 to 60 pounds like you do.  10 pounds is just about the max that I can fit into the Bradley.
