Hello all, I have following this forum for a while and today I finally bought a the digital smoker. Great purchase and worth every penny.

This afternoon I put in jerk red snapper and it turned out great. I did mess up and let the bisquette burn a little too long but that is why I am rookie.

I defiantly want to mod this by adding a 2nd element and a temperature probe. Can anyone suggest good guides for both?

If you are doing fish and need tight controls on the smoker you might

want to look at an Auber PID. It will also let you ramp your temps.

Look at the link SouthernSmoke post and that is our recipe site. Lot of

good info on it and the instructions on the mod. Read that and if you

have any questions, just ask them.

Jerk red snapper is one of my favorite dishes. Accompanied with some coconut rice and peas you can't ask for a better dish. I sure would like to try your recipe.

Thanks for the great information guys. I forgot to take pictures on the final product, I was to excited to eat it.

I had jerk sauce I picked up while we were vacation in Jamaica and it turned out great.

You guys think the mods are worth it?  for sure I will do the temp probe

If you live in a cold area and want to smoke all year,

then the mods are well worth the cost.

Just be aware, if you dual element your smoker, it is

strongly advise you control the temp with a PID.
