Any Ideas For Smoking Squirrel?

Buddy Id Bringing Me Some Squirrel To Smoke And I Have No Idea What To Do With It LOL Any Ideas Or Suggestions Would Be Great

Cold smoke for an hour or 2 then wrap in plastic wrap overnight in the fridge. Cut into the 6 pieces like normal and roll in egg wash and seasoned flour and pan fry.

Squirrel Fricassee (with a kick)

4 cleaned and skinned squirrels (carefully remove any shot)
minced garlic
chopped onion
diced hot peppers
Guinness stout
butter (or bacon drippings)
Cajun Seasoning
Flour
chicken stock
peeled and quartered potatoes


Mix the marinade up with the Stout, garlic, onion, and the hot peppers.  Marinate at least 2 hours.  Reserve the marinade.  Cut up the squirrels into quarters. Cold smoke the pieces for 2 hours.  Take flour and dredge the squirrels - add a good bit of cajun seasoning to the flour before you dredge.  Fry the pieces in a skillet with the butter until browned. Deglaze the skillet with the reserved marinade adding the salt and pepper flakes.  Put the squirrel in a pot, add the deglazing juices, along with the potatoes and chicken broth if needed.  Other good additions are mushrooms, crumbled bacon, and a little lemon juice.  Cover and bake at 275 degrees for two hours. Remove from the oven and, in a separate pan, reduce whatever marinade is left and whisk in six ounces of additional butter.  Plate the squirrel, pour the gravy over and serve.

To make even better, add dumplings during the last 15 minutes of cooking

Dumplings:

2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3 tablespoons shortening
1 cup buttermilk

Combine the flour, baking soda and 1/2 teaspoon salt and place into a food processor, pulsing until the mixture is the consistency of coarse meal. Add the buttermilk, stirring just until moistened. Turn dough out onto a floured surface and knead 4 or 5 times -Roll the dough to a thickness of 1/4 inch, then cut into 2 inch strips.strips

Lay the dumplings over the top of the meat, cover tightly and cook for 12 to 15 minutes.

I would shoot that "smoking squirrel" and bury it ... It probably has lung cancer  ;D ;D ;) ::)  OK, OK ... I'll go back to my corner now!!

Well I cut the squirrel up. Throw in crock pot with enough water to cover. Remove when nice and tender. Remove and smoke for two hours on low heat. Then roll in a spiced flour mix and fry till crispy. Add flour to the crock pot to make gravy, and make biscuits. Then enjoy one of the best meals to come out off the hills of Kentucky.

Peter, if you could just go ahead and wrap that squirrel up... and uhhhhh, drop it off at Initech, ummm..., on your lunch hour, that would really be great.
