Finally got around to making....and we(hubby and I) are glad I did!  Was out of casings so was just planning to patty them.  But prolly will run to the butchers tomorrow to pick up casings. 



Cut 5lbs off the butt for cubing and putting in freezer to firm up.  The bone end part will be for making Hominy soup tomorrow.


Ground and mixed up.  Since I thought I was making pattys I used hi temp cheese.  Stays better in pattys when cooking.


Of course had to take some out for tasting.  Cooking in dry pan.

Just on toasted bun.


My hubby says thank you for the recipe...it was most delicious!  He's taken 2 in to work tonight. ;D

Those look perfect!  After seeing them I just went to the freezer and pulled a pack out and put in the fridge to thaw.  Guess what I am having tomorrow  ;D  So glad you liked them and tell hubby he is most welcome.


Enough ain't enough and too much is just about right.
