Here's the recipe for my wife's rice bake dish that caught a few eyes.

1 cup uncooked long grain rice
2 bay leaves
1 tsp salt
3 tbs olive oil
2 medium onions
1 garlic clove, minced
2 cups sour cream
1 cup cottage cheese
2 tsp Tabasco or Habenaro sauce or more if you want
1 tsp cumin
4 cups shredded Monterey Jack cheese, divided
2 4-ounce cans green chilies, drained
1/4 tsp course black pepper

1. Cook rice according to package with bay leaves and salt. Let stand 2-3 minutes when done, covered. Remove Bay leaves
2. Preheat oven to 350F. Spray 13 x 9 baking dish
3. Heat oil in large skillet over medium heat. Add onions: cook 'til tender, add garlic, cook 30 seconds. Remove from heat.
4. Add rice, sour cream, cottage cheese, Tabasco, cumin and 3 cups cheese to onion mixture. Stir well.
5. Spoon half rice mixture into baking dish. Sprinkle with chilies. Add remaining rice mixture on top. Sprinkle with pepper and put remaining cheese on top.
6. Bake 25-30 minutes, until bubbly and golden. Remove from oven and let stand 10 minutes.



It's not realy hot or spicy like this, atleast not to me, It can be doctored up with more of anything if you prefer more heat. Enjoy, Jeff.

Thanks for the recipe. I does look good, but I have one question. In the ingredient list you have 2tsp of Tabasco or Habanero. I'm just checking to see if there is a misprint. Could that be Tabasco's Habanero Sauce, or is it one or the other.

That is exactly what I was hoping it would be!  Thanks to you and your wife.  That is definitely on a menu coming up very soon in the Caney house and/or the memorial bbq.

Thanks for the comments, my wife will appreciate it.

Habanero Smoker, she uses Tabasco sauce sometimes or whatever hot sauce we have on hand. She used some habanero sauce we had out of a gift set the other night. So, pretty much whatever  your preference is and more than 2 tsp if you like. I didn't think the last batch was as hot as previous batches she's made.
