Looks great!  I use Hi-Mtn spices almost exclusively, despite the fact that some folks don't think too highly of them.  I sell over 100lbs of finished GB jerky a year, and have had very few complaints.

Question for you though, I notice that Hi-Mtn has a Jalapeno blend out now.  Have you (or anyone else) tried it?  If so, what do you think?  My customer's favorite is Inferno blend, but I am now intrigued by this Jalapeno thing.  Maybe I should shut the hell up and just try some ;D.

I have never tried it myself but sounds interesting.

I have a question for you about the GB jerky, do you cut back on the amount of cure? I made it once with their recommended amount and found it way to salty. Not even the dog would eat it so I have not made GB jerky since using the Hi-mountain stuff. Let me know how you do it.

I haven't tried the jalapeño yet. I always add Cayanne to the inferno blend to kick it up some.

I always do 15 lbs. at a time.  When doing this much GB the recommended amount of cure is 2/3 cup.  I've used that for the past 4 years, and never had an issue.  I also usually add a few tablespoons of Lowery's Seasoning Salt on top of the Hi-Mtn and cure, and haven't had any complaints.  We have two Golden Retrievers and I guarantee that you couldn't make anything that they wouldn't devour.

I use Hi-Mtns own cure.  If you are using someone else's, check to make sure that you've got the right ratio.  Good Luck!
