Newbie from Fredericton, NB

hey there,

I purchased a Bradley Smoker this past August and have had some good tries and some not so good ones. For my first smoke I did ribs, but made the rub way to spicy (human error I believe with measurements), the second time made a moose roast, it did not turn out well at all, it was very tough and dry. I then attempted two chickens. oh my delicious and then another attempt at ribs, which turned out fantastic.

I will be venturing into smoking other meats am will most likely be looking for some guidance.
Thanks all for your post on the boards thus far, very interesting to read all the different ideas and techniques people use.
