The hunter can't make it over until tomorrow.  Told him I was going to cut into a chub to take a test as I didn't want to poison him.  He said go for it.

Dang!  That secret receipt of NEPAS for SS is kick butt gooder than good!  The hunter will not be unhappy at all!

After 2 days in the fridge they are losing moisture.  The casings are getting really lose.  I should have weighed them green and taken notes.  Will do it when I do another batch.

That has gotta be soooooooo gooood.

When doin the dry time in the fridge I go by the squeeze test.  ;D

When its as firm as I desire then I pull the casings off and package.
