Potato Sausage????

Has anyone ever made potato sausage??  Not sure ratio meat/potato? Can I smoke it or will this not work with the potatoes?
I once had a neighbor who made some great tasting and had cheese in it.  Thought if I could get a great recipe it would be simple breakfast when we go trail riding/packing/camping.  

Any advice would be greatly appreciated.  

Going for my first try at sausage this weekend and thought I would try a few different combinations.

I've made sausages, but not potato. Pulling out my Rytek Kutas bible, he has a receipe for Swedish Potato Sausage. This has 6 potatoes (6 cups worth), 1.5# pork butt, 1# lean beef, 1 cup milk, 1 cup non-fat dry milk, 1 cup water, 1 onion, salt, pepper, and allspice. This is an unsmoked sausage, ground through a 3/8 plate twice. Indicates it is very perishable.

There is a similar receipe in another book I have (Home Sausage Making, Reavis), but without the water and milk products.

Thanks arcs_n_sparks, I seen the similar recipe on Olds site.  I was hoping for a recipe to smoke/cook.  I'm worried about the perishable factor being out on the trail.

I have made quite a bit of sausage in my time but never potato sausage. There is a sausage recipe on the recipe site that I love called smoked venison sausage. This would be great to take out on the trail it makes a great snack. Of coarse you could substitute beef for venison. When using beef I grind up a chuck roast.HTH[:)]

Hi Nodak. I've made the Swedish Potato sausage that arcs-n-sparks is talking about along with a half dozen variations. They definately are very perishable and do not smoke up worth a darn. They are for sure a fresh sausage. The potato in them tasted weird to say the least when I tried smoking them. They turn out great pan fried in a little butter and served with eggs for breakfast. After three days in the refer they started to get a bit off on the flavor. I made them with raw potato and cooked potato and they both turned out. Just thought I'd toss this out for you to chew on. Have fun and keep us posted.

I've got three generations of Swedes in my lineage, all potato sausage makers and my dad and I began making potato sausage about 35 years ago. We always smoked about half of each batch and it tastes great. Never had a problem.  The sausage is quite perishable however and what you don't use immediately should be frozen. I like to cut a ring of the smoked sausage into 2-3" lengths and then halve them lengthwise before frying for breakfast.

Hi 3rensho; What kind of potatoes do you use? I used russets which are kind of starchy and they got a little bit of a bitter taste when I smoked the sausage. I didn't try smoking the links I made with cooked potatoes. In your recipe do you use uncooked or cooked? Sure sounds like a good sausage you have there.[:p] I cold smoked them and mabe that's the problem. What temp range do you smoke them at?[?]Thanks and regards; Patrick[:D]

Iceman, I used russets too when I lived in the US.  Definitely my favorite potato.  Unfortunately russets are not available in this neck of the woods and I use Bintje which are yellowish and not too starchy.  They work for me as well.  I only use raw potatoes and never cooked.

yes I have made potato sausages and they were good.  I used 5 pounds potato 5 pounds pork 5 pounds of venison and one large onion.But I didnt smoke them.[:D]
