Small Brisket

Too nice of a day to let the smoker do nothing.



So I decided to go out and grab a small 4.5 pound brisket at the local Fareway. I slathered it with mustard and my favorite rub: Smokin Guns BBQ - Hot (If you have not tried this it is GREAT!!)



I am going to put it in the smoker, my plan is to set the cabinet temp at 220, smoke with hickory for 2.5 hours and bring it to an IT of 170. Then FTC for 1.5 hours.



I will post a money shot in approximately 6 hours...Can't wait!!!

How long of an extension cord is that?  I've read over and over that the Bradley doesn't get along too well with them.

Here it is after 9 hours in the smoker, now it's time for FTC



After FTCing for 1.5 hours, its ready to hit the table!!



This is the first time I have ever poted pictures on here. I hope they all turn out OK! I took the brisket to an IT of 170, I think next time I will go for 180. For the most part it was very tender but some places were a little tough. Overall, everyone loved it!

Thanks for all the compliments guys! Everything I have I read and took off of this site. The setup seems to work great for me. As for the extension cord, It is a heavy duty 25 foot cord. I have never had any problems with it.

Rudyfo, what type of cabinet is that you are using?  I realize you made a lot of modifications to it.  Just wondering what you used.

It is a Suncast cabinet that I purchases at Mendards. I bolted it onto a wooden table that I made out of 4x4's and 2x6's.i then added some wheels so I can move it around if needed. I cut a hole in the cabinet above the smoker vent and put a chimney vent in so that the smoke can escape through the top. I also cut a hole in the back to run my wires from the main box to the smoking cabinet. I borrowed some ideas here and there from different people on this site and came up witH this. It has worked wonderfully thus far. I have had it over two years now. If you have any questions feel free to ask!
