venison hot dogs

just got a new obs I'm going to make venison hot dogs could use some help on cook and smoke time. also do you give them a warm bath at a 180 degrees and then a cold bath. I've always been the mixer and stuffer now I'm going solo. Would appreciate any feed back you guys have always been great.
