Lunch, Dinner and Snacks

Todays lunch - inspired by another post. Kielbasa fried in a little butter, on toasted rye with both YM and Dijon. Was gonna add some smoked cheese and raw onions but the cheese is cheating too much on the low fat diet and the onions wouldn't make the wife happy later.  ::)

And tonights dinner in the OBS 1 rack of side ribs with YM glue and Jan's rub. Plus 4 racks of blazing stachios / almonds for snacks. The ribs will get a mop of molasses after 2 hrs of smoke, when the nuts come off.

Ever since the first batch of these nuts they seem to be disappearing faster and faster. Gonna have to start making double batches (8 racks).

I know. I have more ribs that were supposed to go on that rack with the lonely one but the wife tells me we have the grandchildren for dinner and they don't like smoked ribs so the rest will get BOILED - can you believe it.  :'(  Broke my little heart.

I'd get them a pork chop before boiling ribs! Yikes!  :o  Gotta please the grandkids tho. :)  You got a nice smoke going on.

Here is a pic of the lonesome rib after the 3 hrs of smoke (2hrs of Hickory and 1 hr of Birch).

And here is the lonely one after 2 1/2 hrs in the tent with a little chicken broth. I didn't put it back on the smoker for round 3 as round 2 went a little longer than I wanted (had to plow some snow off the driveway and it took longer than expected).

This was the 3rd time I have tried ribs in the smoker and I got it right this time. The meat just fell of the bone and was soooooo tender. These were the most tender and juicy ribs I have ever had and the wife thought so too.  8)

I finally get it right and the other half of this rack was BOILED :'( :'( :'(  It could have been sooooo happy.

Well most of them and then I see some meat stuck on the bones of the ones they almost finished and I think to myself how that could have been so much better.  :'( :'(    But the good news is the wife says take out some more ribs and the grandkids will have chicken tomorrow.  ;D 8)
