Hi There,

Tomorrow I am going to smoke my first brisket. I have the rub and smoke type picked out, but I do have a question about cook time and internal temperature.

1. Roughly how long should a 3.5lbs. brisket cook for?
2. What should the internal temperature be when I stop smoking/cooking it?
3. What is the best temp to smoke/cook it at?

Thanks very much

I did one last night. 9.57lb took 10 hrs at 225'. Too it out at 196'.

1) 3.5 lb brisket should take about 5 to 7  hours
2) internal temp 195 to 200
3) box / oven temp 225 to 230

go by temperature rather then by time

Thanks very much for the info. I will let you know how it turns out.

Everything worked out great. Was about -2 degrees (28 Fahrenheit) during the smoke.

Ended up smoking for 9 hrs @ 225F. Maybe could have gone 45min-1 hr more. All in all very happy with the first time through.

Thanks again for the help.
