Will it hurt the smoker to spray apple juice on my meat during the smoking process?

The only thing it will hurt is your temp inside the oven. You will loose a lot of heat every time you open the door.  You can keep a couple of brick in the bottom of the smoker to act as a heat sink and help you recover the heat loss. Or you can do what some of us have done and add a second 500w element or one 900w.

While doing butts and brisket, I always spray apple juice whenever I open the door. I do not open the door just to spray though. Just during rotation of racks, re-filling the water bowl, etc.

Spraying apple juice gives the meat a nice golden color.
