smoking oysters

I plan on smoking some oysters tommorrow and was just wondering what to serve as sides with them. It is something I have not done for a long time as fresh oysters are hard to come by here . Thks Piker

I don't eat them but when I see oysters Rockefeller yet sure look good. Hopefully someone will chime in wit a suggestion. :)

I stick with beer (and yes, hot sauce is allowed).  You don't get distracted from the oysters and you don't waste capacity on "fillers."

thanks guys for the suggestions it is what I thought but the wife wanted more for the company. I checked all over the internet and the only thing that was given was a salad. I am not sure if they even like oysters so I guess I had be prepared. Thks again  Piker

I smoke them often and end up eating half of them before they cool off.  When serving company we have crackers, cream cheese, lemons and strips of pickled hot peppers.  Having them them rest in some nice olive oil after they cool a bit really enhances their flavour.  Tell your guest to chew slowly, here we always find a few pearls each season.

Habanero Smoker

Any starch or green vegetable should be a good side. Baked potatoes, or Syracuse Salt Potatoes would be nice. I recently saw a show that boiled baby Yukon's until tender; slightly flatten them, then fried them in bacon fat (or oil of you choice) until the outsides were golden and crisp. You can prepare the potatoes ahead of time and then fried them just before serving. Maybe a cream spinach recipe may work well as a side.
