So I made my first brisket,  I followed the Pachanga style of cooking it.  I was very surprised and pleased.  I put it on at 11pm at 200 degrees.  I got up once in the night to check on it.  I promptly rolled out of bed at 6 am and bumped it up to 225 degrees.    With 2 soccer games and field hockey I was kind of worried.  It turned out great.
It cooked for a total of 16.5 hrs.  It finally got to 190 degrees about 3:45 pm.  I was fine with that, especially since I wrapped it up and put in the cooler.  We ate at 6 pm and the brisket was still hot when I pulled it from the cooler.   I appreciate all the help and ideas that are on the web.  It really made a difference in cooking the first brisket.
