Another bake goodie!

With Mothers day coming up I thought I'd offer you guys another treat to make for your wife or mother(or mother in law). We call this German cherry cheesecake because a German came up with it(my mother) it has cherries on it and has cream cheese in the filling.  I use to make the scratch sponge cake for the bottom but when one of my sons wanted to make it for a father/son bake off in the cub scouts I came up with a easier version for them to bake together, and this is the one I'm giving you.  BTW he won for prettiest cake and it sold for $30 at the auction.  The things you can do with this cake is only limited by your imagination. Don't like cherries use blueberries.  Use fresh strawberries with a glaze or no glaze.  Use any fresh berrys together.  Get the idea?  You will once you have the pan.

This recipe uses: 1/2 box of cake mix (I use Duncan Hines Classic yellow or butter)
                           1 egg
                           2/3 cup water
                3 Tbs oil
Mix like a regular mix.  You can also mix the whole box according to directions and make 2 bottoms, or some cup cakes.

Prepare pan by spraying well with PAM and making a circle of wax paper or parchment paper to cover bottom.

Pour batter into prepared pan.  If you have the "dark" pan bake at 325* for 20 minutes or until cake springs back when lightly touched. (tin pan at 350*)
Let cool for 2-3 minutes turn over, remove pan and paper to finish cooling.

Filling: 4 oz cream cheese at room temperature
            1 cup chilled heavy or whipping cream
            1 tsp vanilla extract
            2 Tbs powder sugar(or to taste)

In large bowl,  beat the cream until thick and add sugar and vanilla.  Beat until thick and fluffy, push cream aside and add cream cheese and beat well and then incorporate the cream cheese into the whipped cream.  Spread on to cooled cake bottom.
Open can of fruit and place on filling.  All done!

Turn pan over to get the circle made  and batter should go up half the pan if using the whole mix


Cake should pull back from pan a bit when done    And peel paper off while warm


Done and sliced  Keep leftovers in refridge



Yes it can be made with low fat cream cheese and splenda type sweetener.   Sorry so wordy and so many pictures.  It really is easy!
