Wow Love it! Are you talking on the side or wrapped on the meat? The meat looks like it is wrapped in something but dont look like bacon from here. Looks like a dough or cabbage or something.

Sorry. The meat is first wrapped in proschuito and then chilled. Then it is wrapped in pastry dough or philo dough and baked at 375 until the dough is browned and the internal of the filet is below 125.

The trick to this cook is to brown the filet without raising the internal temp above 90 degrees.
The fight isn't over until the winner says it is.
